Meet the Artist
Joelle Mahoney

Born in France, Joëlle became a part of the family’s meal preparation and holiday planning team at an early age. There was always a reason to bake something new. Starting with New Years Day, followed by The Three Kings Day, birthdays, anniversaries, Bastille Day, flower festival days, and on and on. Before you knew it, Christmas had come again. Always a reason to celebrate and always starting off in the kitchen! This is where both native talent and early training, combined to fire a passion for pastry and confectionery art.

Betty "Rose" Cake
A Tribute

When American Cake Decorating magazine asked Joëlle to do a commemorative cake for their tribute issue to Betty Van Norstrand, she thought what better than to create a cake, in the “Betty” style, highlighting the very first rose she was taught by Betty.

Joëlle chose an oval-shaped cake, peach-colored roses, a side drape and of course trim ribbon and butterflies, which are all among Betty’s favorite colors and decorations. Last but not least, the rose topper on the cake is in fact the first rose Joëlle made with Betty. Joëlle had kept it tucked away all these years as a souvenir of that very special day!
